Seabird, London

Seabird ascends to the 14th floor of the Hoxton Hotel, beginning in the elevator, with music, sight, and smell whisking guests out of the city murmur and into a sun-filled room of precocious discovery: views are panoramic, and at night, the London skyline emerges beyond landmarks, forming a surreal landscape of neon shapes. The music is escapist, constantly twisting towards a new destination, and the provenance of the cooking, cocktails, and wine suggest an extended holiday, somewhere south of the London.

As Executive Creative Directors for the development, we fully led the vision for layout, interior, concept brand collateral, F&B development, smallware & glassware, uniform design, and music curation, while bringing a layer of New York sensibility to the entire process.

Tropical plants and dramatic lighting fill guest’s eyes, as well as the wide-eyed color story of the branding: saturated, psychedelic color stories (ala Eline Van Dam aka Zeloot) reference the unfettered, vacationed sensibility of the food and drink, naturally colorful, playful, and synchronized.

Seabird conjures a feeling of escape and luxury, while staying true to Hoxton ideals: sourcing locally, serving quality without pretention, and always sharing the thrill of discovery. It is inspired by the simple, ingredient-focused plates of Portugal, Spain, and the Basque country as well as the extravagant, resplendent nature of American raw bars. By pairing and layering the two, we create a coastal fantasy of communal and celebratory dining. Seabird’s cocktails borrow the colors, spices, and citrus of Morocco and the Mediterranean to deliver efficient, effortless service for a high-volume space, employing custom tropical glassware, crushed ice, and market-fresh garnishes that evoke the Seabird style and story.
